If you’re looking for a healthy, easy, and delicious recipe this one is for you! If you don’t like salmon you can easily swap it out for chicken, either way, this is always a big hit at my house! Whether you’re having guests over, making something to celebrate or fixing a healthy meal for your family this recipe is the perfect go to!
Whenever I make pasta I always bulk it up by mixing in vegetables, for this recipe I mix zucchini with whole wheat pasta, it’s just as yummy and helps to cut back on the calories! The lemon and garlic flavoring tie the whole meal together and the salmon and pasta will literally melt in your mouth.
Here is the breakdown for this amazing recipe……
Ingredients:
1/4 cup of Olive Oil
3 chopped garlic cloves
1 TBS of lemon zest
1/2 tsp of salt
1 tsp of parmesan cheese
1/2 tsp of dried oregano
Instructions:
Sprinkle garlic salt and pepper on salmon, wrap in foil and bake at 400 for 10-12 minutes. (I like my salmon a little bit pink because it is softer, add more time if you like it cooked all of the way through!)
Cook thin whole wheat pasta as directed on the package and steam asparagus.
For the sauce combine the olive oil, 3 chopped garlic gloves, lemon zest, salt and oregano in a sauce pan and cook for 1-2 minutes. Add in spiralized zucchini and whole wheat pasta until they have been coated by sauce.
Stack steamed asparagus on a plate, next add the pasta/zucchini mixture, sprinkle with 1 tsp of parmesan cheese and top with baked salmon.
