It’s easy to get anxiety about having guests over when you’re trying to stick to your clean eating goals. I wanted to share this killer recipe with you all that I use when entertaining my guests. This recipe is by, Ina Garten and has always been a huge hit at my house!

I have tweaked a few ingredients in this recipe to make it a little easier…
Here is what you will need:
– 1/4 cup of olive oil
– 3 tablespoons of minced garlic (9 cloves)
– 1/3 cup of cooking wine
– 1 tablespoon of grated lemon zest (2 lemons)
– 2 tablespoons freshly squeezed lemon juice
-1 1/2 tsp of dried oregano
-1 teaspoon of minced fresh thyme leaves
– 1 tsp of salt and freshly ground black pepper
– 4 boneless chicken breast (I don’t use meat with skin!)
Read the thorough instructions for this recipe here. For the sauce: warm the olive oil and garlic in a saucepan for 60 seconds. Remove from the heat and add the remaining ingredients (minus the chicken and ground pepper) into the saucepan. Pour the combined ingredients into your baking dish. I usually dip one side of the chicken in the mixture, flip it over and do the same to the other side. Then add pepper, lemon slices, and fresh thyme on top for the extra flavor. Bake for 30-40 minutes at 400 degrees. Remove from oven, cover with lid or tin foil, and let rest for 10 minutes to absorb the juices. I made my sauce in a Dutch oven and baked it in the same dish without the lid on.
How beautiful is this chicken? It’s seriously the BEST meal to make when entertaining! I recommend serving this with brown rice and green beans or roasted sweet potatoes. You can even do brown rice and white rice, giving your guests an option between the two. (You can always choose the brown rice to stick with your goals of being healthy!)
And don’t forget about dessert! I would for sure do something with fresh fruit. Have fruit with cream or cake, giving your guests options while you can just stick with the fresh fruit.
